- 8 eggs
- 800g yogurt ( I usually use goat kefir but you can use any yogurt you like)
- 250g sour cherries (I always use frozen without pit)
- sweetener of choice (I use monk fruit or stevia but you can use whatever you want)
- nut butter of choice to garnish
- vanilla protein powder (optional – if you want even more added protein)
Cooking Instructions
This high-protein yogurt cake is very easy to bake. It will take you just 5 minutes to assemble and you only need one tray.
- Take the tray you want to use in the oven.
- Mix the eggs with the yogurt and sweetener.
- Garnish with sour cherries on top.
I always use a heat-resistant tray as it doesn’t stick, it is easier to clean and it is also healthy. I am trying to stay away from Teflon or aluminum because if you scratch them, they will leak toxins into the food.
Here is what I put together in just 5 minutes. I mixed the yogurt with the eggs and sweetener and I added the cherries on top. Now, off to the oven at 180C/356F!

I added some pistachio butter because who doesn’t love pistachio? I am taking advantage of the proteins and healthy in the butter. Keeping no sugar is the key to maintaining my blood sugar levels constant.
